Low fat pineapple cake

I love finding 2-Ingredient Recipes, Especially this one my mom won't feel bad eating. It takes all of 2 minutes to stir together and throw in the oven and is a perfect low cal treat! It's a light and refreshing dessert everyone loves. Moist and delicious!


1 box angel food cake mix
1   {15 1/2 oz}. can crushed pineapple with juice

Mix together and pour into a 9x13 un-greased glass pan. Bake at 350 for 25-30 minutes.

Broil a Grapefruit

Addicted to Pinterest, I really just need to get off instead of spending hours apon hours looking at everything. But I came across this from a  Pinterest blogger that had said "Broil a grapefruit - If you’ve never done this before, you are seriously missing out. Grapefruit is good but broiled grapefruit is GOOOOD. The sugars caramelize and the flesh gets a little warm and gooey and it’s a sweet, tangy, brûléed masterpiece for your tastebuds. I highly recommend it." So since I had one grapefruit left I decided to try it. And I too hightly recommend it!

Ingredients
  • 1 grapefruit, cut in half and segmented with a serrated knife
  • 1T butter, melted
  • 2T brown sugar
  • cinnamon, nutmeg, ginger, etc
Method
  1. Turn on your broiler and position the rack in the top shelf, as close to the broiler as you can get it
  2. Halve and segment your grapefruit. You might need to take a little slice off the bottoms so that they don’t roll around
  3. Mix butter, brown sugar, and desired spices until they form a thick paste.
  4. Place grapefruit halves in a broiler-safe pan and smear the butter/sugar paste on top.
  5. Broil grapefruit halves for 4-6 minutes, keeping an eye on them and rotating if necessary.
  6. Remove from oven and serve warm. Yum!

Bubbly Bacon Breakfast Bake

Ingredients:
3/4 – 1 bag TATER TOTS
salt and pepper to taste
1 small onion or 1/2 large onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 lb bacon crisp, crumbled
8 eggs
2 cups milk
3 cups cheddar jack or Colby jack cheese, shredded

Directions:
 
In a 9×13 casserole add the TATER TOTS, salt and pepper 1tsp of each. Bake in a preheated 400 degree oven until TATER TOTS are golden brown. Remove from oven and set aside. Lower oven temp to 350. In a mixing bowl, add 8 eggs, 2 cups milk, and 3 cups shredded cheese. Mix well and set aside. In a frying pan, fry bacon until crisp, then crumble.discard all bacon grease except 1 tablespoon for sauteing the onion and peppers. In the same fry pan as the bacon, saute the diced onion and peppers until soft. Layer the onions and peppers on top of the precooked TATER TOTS. Layer the bacon crumbles on top of the onions and peppers. Pour the egg and cheese mixture over the bacon layer. COVER with aluminum foil and bake in a pre-heated 350 oven for 45 minutes. UNCOVER and bake for an additional 30 minutes.

Busy Fun Weekend

I can't believe it's March and it's 80 degree's outside!
The Girls and I went to Cheesecake Factory on Friday Night for dinner and desert. It was an expensive night but worth every bite!





















Then Saturday night Jill, Mike and Brandon and I all went Rock Climbing. It was so much fun! So intense and a great workout we all reached the top and felt very proud of ourselves! But my arms are killing me today!

Easy Peasy Pizza Balls

Pizza balls! Absolutely delicious! Fast and easy! Canned biscuits, mozzarella cheese, garlic, and diced pepperoni all rolled into a ball and put in a muffin pan! Bake for 15 minutes! Add whatever other ingredients you'd like! Dip in sauce!

I have been craving going hiking this winter, so with the first signs of Spring I ventured out to the woods. We started on a hiking path and then decided decided to cut it and cross a cornfield then ended up deep into the woods, and when I say deep I mean deep! Edible Finger Paint Recipe

 Homemade Edible Finger Paint Recipe: 
1/2 cup cornstarch
                             2 3/4 cup cold water
Mix together cornstarch and water in a saucepan until there’s no lumps. 
1 envelope of unflavored gelatin (I used Knox)
1/4 cup cold water
Mix together gelatin and water and set aside.

Cook cornstarch mixture over medium heat, stirring constantly, until it boils. It’ll become thick as you’re stirring.
Remove from heat and stir in the gelatin mixture.
Cool and pour into smaller containers. Add food coloring for desired colors.

Baby Games: Sticky Mat & Feet Paintings

Some Sensory Idea's to share!

                                  Sticky Fun
                             I've seen lots of fun ideas on Pinterest using contact paper lately and thought that maybe the babies in my care would enjoy this sticky sensory experience!  I put the contact paper, sticky side up on the ground.  I taped it down with masking tape.

                             Feet Paintings
 Using the exersauser, I taped a piece of construction paper under the babies bare feet and added washable paint the paper.  I put a blob of yellow and a blob of blue on the paper and away he went!  The 'big' kids in my care were SO excited to watch him paint with his feet!  What was even better was watching him mix the yellow and blue to make green!
