Chocolate Chip Quinoa Trail Mix Balls






Ingredients:
1 cup old fashioned or quick-cooking oats, dry
1/4 cup quinoa, dry + 3/4 cup water
1/4 cup shredded unsweetened coconut
1/3 cup unsalted sunflower seeds
1/2 cup dark chocolate chips
1/3 cup dried cherries, raisins or cranberries
1 tsp vanilla extract
1/2 tsp sea salt
1 tbsp peanut butter
1/3 cup honey

Directions:
Combine the quinoa and water in a small saucepot and bring to a boil. Reduce heat and simmer for about 12 minutes, until quinoa has absorbed all the liquid. Fluff and scoop quinoa into a large mixing bowl.

Add sunflower seeds, oats, dried cherries and coconut to quinoa and mix well. Bring honey to a simmer on the stove then stir in the vanilla extract and pour on top of nuts and seeds. Mix until well combined.

Let mixture cool before adding the chocolate chips, peanut butter and sea salt. Mix well with your hands so the peanut butter is evenly dispersed but be careful not to melt the chocolate chips! Chill dough in fridge for an hour.

Using wet hands, gently roll mixture into golf ball-sized balls. Place balls on a plate and chill for at least two hours until firm.
Time:
2 1/2 hours (includes time to chill)

 makes about 15 bite-sized balls

Getting ready for Halloween!

October is flying by, next week the Baby Bears will get to parade around the center in their costumes and we'll take pictures of their pumpkins. This week we got ready, and we had a lot of fun dressing up. Some of these photo's may have been staged a little, Ha-Ha!

Just a little Gross Motor!

I set up a obstacle course in our room yesterday. We had tunnels, tents and soft climbers. They had so much fun, They played on it for at least an hour. Next time I think we will do it before naptime so they can get all of their energy out and then crash! Here are some clips of our little climbers...

Another 2 Year Old Birthday!!!

Today we celebrated Remmi's 2nd Birthday! We now have 6 two year old's the Baby Bears room. Wow! I can't believe all my little ones are getting so big already!

We had a great day! Remmi was really excited to wear the birthday hats, and I was really impressed with the baby bears during our picture time. I was so proud that they kept them all on. Which will be great when we do our "gobble" pictures in November!

Today we had fun finger painting with Red, Yellow and Blue. We went outside and played on the climbers. We wore birthday hats and opened presents! All and all I think she will be quite tired tonight!


Just an F.Y.I. If your child starts saying "Naked Baby" I have been calling them that when they get naked to do messy art. I can't help myself really, but a lot them have started saying it. They look pretty cute just running around in their diapers!

Messy Play!

Well the orange slime I created in the kitchen last night was a total epic fail..So instead we played with cold colored spaghetti noodles in the sensory table this morning. It was a huge hit! We found lots of spiders hiding. And they were pretty good not to get it all over, we tried to contain the noodles as much as possible! 



We are also working on our fine motor skills using contact paper sticky on the window and sticking out bugs, and leaves to it! They like it a lot, and now our room really looks like Fall!

We love Calming Lotion!

I love the smell of Johnson & Johnson Sleepy Time Lotion. I gave them all lotion body massages today before nap time which put most of them to sleep. Then this afternoon we decided to finger paint in it, easy cleanup we just rubbed it on our arms.

Our favorite things right now in the toddler room!!!

Lately our favorite things to do in the toddler room are beauty shop and throwing balls,we have a few good ball players in this bunch!



I think we will be doing the ball pit more in the winter, but of course I had to try it out first!
