Gingerbread Muffins

Ingredients:
1/2 cup brown sugar
1 egg
1/4 cup molasses
1/2 cup buttermilk
2 tablespoons oil
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/3 cups flour
3/4 teaspoon baking soda

Directions:
Preheat oven to 375 degrees. Spray a mini muffin pan with cooking spray.

Mix together the brown sugar, buttermilk, egg, molasses and spices. Whisk the ingredients together until well mixed.

Add the flour and baking soda. Mix just until all is combined. Scoop the batter into prepared pan.

Bake for 8 - 10 minutes. Remove from pan.


Next week we will try these yummy muffins for their afternoon snack, we will see which toddlers like the taste of gingerbread.
